A most popular herbal cold remedy, effective against influenza virus. A tablespoon taken daily during the winter months is wonderfully effective as a preventive. Use the fresh or dried black elderberries for syrup, jelly and wine, never the red berries they are potentially toxic. Never eat uncooked elderberries.
1 cup fresh or 1/2 cup dried elderberries
3 cups water
1 cup honey
1. Place the berries in a saucepan and cover with the water. Bring to a boil, reduce heat, cover and simmer over low heat for 30-45 minutes.
2. Smash the berries, strain through a fine mesh strainer or cheesecloth and return juice to pan.
3. Add 1 cup honey and warm until blended.
4. Bottle and store in refrigerator, 2-3 months.
